Pumpkin Streusel Muffins


  • 1 1/2 c. flour
  • 1 1/3 c. white sugar
  • 1 teaspoon baking powder
  • 1 tsp. cinnamon
  • 1 1/2 tsp. ground cloves
  • 1 1/2 tsp. allspice
  • (*can replace all spices above with 4-5 tsp. pumpkin pie spice)
  • Pinch of salt
  • 1 1/2 c. pumpkin puree
  • 3/4 cup vegetable oil (or apple sauce)
  • 2 x-large eggs


  • 2 1/2 tbsp. softened unsalted butter
  • 1/2 tsp. vanilla
  • 1/3 c. brown sugar
  • 1 tsp. cinnamon
  • 7 tbsp. flour


  1. Preheat oven to 375F.
  2. In a large bowl, mix together flour, sugar, baking powder, spices, and salt.
  3. In a separate bowl, beat together the pumpkin puree, vegetable oil and eggs.
  4. Fold/stir pumpkin mixture into flour mixture until it just comes together, don’t over mix!
  5. In a separate bowl, combine ingredients to make the topping: cream the butter with the vanilla and sugar, add the cinnamon and flour and mix thoroughly – set aside.
  6. Lightly grease muffin tins or line with paper liners. Scoop batter into prepared muffin cups and cover each one with streusel topping.
  7. Bake in preheated oven for about 27-30 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
